Smoked Chicken & Rice

This is a family favorite that kids and adults will love and with the added smoke and prosciutto it’s a one of a kind. Our recipe only takes a few minutes to prep, an hour to cook and has only one dish to clean, perfect for a busy day.

Ingredients 

4 boneless, skinless chicken breasts

3 boxes of wild grain rice

2 1/2 cups of cream of chicken condensed soup

2 1/2 cups of water

3 tablespoons of butter

4 slices of prosciutto IMG_3433

Directions

Combine rice (along with seasoning packets), soup mix, water and butter in an 11″ x 15″ casserole pan and stir until well blended. Next place chicken breasts in the rice mix and season with salt, pepper and your favorite chicken seasoning (we recommend Green Mountain Grills Poultry Rub). Finally top your chicken with the slices of prosciutto. Place in the smoker set at 350f and cook until the chickens internal temperature is 165f, about 45 min. Yes, it’s that easy. Enjoy!IMG_3436
