Bourbon & Peaches: two things that just go together so perfectly, add in some sugar and a kiss of smoke and you have something truly spectacular. This is a quick and easy cake with a show stopping appearance, give it a try at your next get together.
INGREDIENTS
TOPPING/BOTTOM
1/2 cup butter
1 cup packed brown sugar
1/2 tsp of cinnamon
1/2 teaspoon of salt
1 tablespoon of bourbon
2 cans sliced peaches or fresh if in season
1/2 cup of remaining peach juice
CAKE
3 eggs
1 1/8th cups sugar
1 teaspoon vanilla extract
1 1/8th cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
DIRECTIONS
Start by combining topping/bottom ingredients excluding the peaches in a large skillet 10-12″ and melt while stirring, this can be done on a stove top or in your GMG. When completely mixed, add peach slices on top in your desired pattern and set aside. For the cake batter first mix wet ingredients well. Then slowly stir in dry ingredients. Once combined pour over your peach and brown sugar bottom and place in a 375f grill. Smoke for 30 min or until browned and a toothpick comes out dry. Let cool for 10-15 min before carefully flipping onto your serving plate.
