Bourbon Peach Upside-Down Cake

Bourbon & Peaches: two things that just go together so perfectly, add in some sugar and a kiss of smoke and you have something truly spectacular. This is a quick and easy cake with a show stopping appearance, give it a try at your next get together.

INGREDIENTS

TOPPING/BOTTOM

1/2 cup butter

1 cup packed brown sugar

1/2 tsp of cinnamon

1/2 teaspoon of salt

1 tablespoon of bourbon

2 cans  sliced peaches or fresh if in season

1/2 cup of remaining peach juice

CAKE

3 eggs

1 1/8th cups sugar

1 teaspoon vanilla extract

1 1/8th cups all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

DIRECTIONS

Start by combining topping/bottom ingredients excluding the peaches in a large skillet 10-12″ and melt while stirring, this can be done on a stove top or in your GMG. When completely mixed, add peach slices on top in your desired pattern and set aside.IMG_5682 For the cake batter first mix wet ingredients well. Then slowly stir in dry ingredients. Once combined pour over your peach and brown sugar bottom and place in a 375f grill.IMG_5686 Smoke for 30 min or until browned and a toothpick comes out dry. Let cool for 10-15 min before carefully flipping onto your serving plate.
