Chorizo and Egg Casserole

We have an easy and delicious recipe for the next time you have house guests over, are going on a camping trip or an overnight stay at a BBQ competition. Chorizo and Eggs go great together and in this recipe we added some tater tots, cheese and of course some bacon for good measure. Enjoy!



32oz bag of frozen tater tots

8 eggs

1/2 lb of chorizo

3/4 lb of diced bacon

3/4 cup of diced onion

3/4 cup of diced green chiles

1 cup of shredded cheese (cheddar or pepper jack)

(optional) 1/2 cup diced bell pepper



Start by sautéing bacon and chorizo, when you are about halfway through cooking the meat add in the onion, chiles and bell pepper and continue to cook until bacon is 3/4 of the way done. (It will continue to cook in the final step)



IMG_8959Allow the mix to cool in the refrigerator. After it has cooled, whisk together 8 eggs and stir in chilled chorizo mixture. (This can be done the night before if you have an early breakfast planned). Next add the tater tots to a large casserole pan and pour the chorizo and egg mixture over the them. Lastly top with the shredded cheese.IMG_8965  Set your GMG to 350f and smoke for 40 minutes. Serve up and dig in!
