Smokehouse Cookies

So if you’ve never had pig candy…you’ve never really lived. It’s the thing dreams are made of, its sweet, salty and a little smokey. We’ve taken our famous pig candy and combined it with smoked pecans and chocolate chips to make the be all and end all of cookies- The Smokehouse Cookie

Ingredients

1 cup butter, softened

1 cup white sugar

1 cup  brown sugar

2 eggs

1 teaspoons vanilla extract

1 teaspoon almond extract

1 teaspoon maple syrup

3 1/4 cups all-purpose flour

1 teaspoon baking soda

2 teaspoons hot water

1/2 teaspoon salt

3 slices of thick cut bacon

1 cups semisweet chocolate chips

1/2 cup chopped walnuts

 

Directions

Start by laying out 3 slices of thick cut bacon (or more if you just want some good ol’ pig candy) coat both side with a heavy layer of brown sugar and sprinkle with your favorite BBQ Rub (we used a spicy apple rub). IMG_8527You’ll want to let this rest for 30min or until the sugar liquifies. Next smoke the pig candy at 250f for 1 hour or until the sugar begins to caramelize.IMG_8528 During this time also place the pecans in the smoker to roast and gain some smoke flavor. Remove the bacon when done along with the pecans and let them completely cool before dicing into small pieces.IMG_8529 Now it’s time for the cookie dough. Start by creaming the sugar and room temperature butter. Then slowly add in the wet ingredients, mix well. Dissolve the baking soda in the hot water and add.  Next slowly add the flour, lastly fold in the chocolate chips, pig candy and smoked pecans.IMG_8531 Cover and refrigerate for 1 hour. Set your smoker to 350f, place your cookies on a non greased pan and cook for 10 min or until the edges start to darken and the dough no longer appears wet.IMG_8532 Enjoy!
