After you have been cooking BBQ for a while you will develop a passion, that passion leads to an addiction and that addiction leads to an all encompassing lifestyle. You start to dream about BBQ whether you’re asleep or awake, you watch every BBQ show thats on TV, read every book and you imagine yourself traveling to the BBQ Meccas in the United States.
Its been 5 years since I started my own personal BBQ journey and this encompassing lifestyle is taking me to one of the great BBQ capitals….Central Texas. Texas BBQ has its own style, you won’t find any sweet sauces or vinegar soaked pork. Texas is beef country and has a simple mix of salt and pepper letting the meat stand out. Over the next couple days I’ll be traveling east and headed to the Hill Country of Texas where I’ll be making stops at some of the Greats- Franklin, Blacks, Kreuz and more.
