Looking for big bowl of comfort food or something to serve on St Patrick’s Day? We have the perfect beef stew combining Guinness and smoke for a rich and hearty flavor.
Ingredients
2 lb of stew beef or chuck roast cut into 1/2 in cubes (seasoned with salt and pepper)
2 parsnips (chopped)
2 carrots (chopped)
4 medium potato (chopped)
1/4 onion (roughly chopped)
4 cups of beef stock
2 cups of Guinness Beer
1 cup of water
1 can of beef consommé
2 tsp of dried thyme
2 bay leaves
1 clove of garlic
2 teaspoon of pepper
2 1/2 teaspoons of salt
1 teaspoon of garlic salt
1 teaspoon of Worcester sauce
fresh parsley for garnish
Directions
Start by searing the seasoned meat in a cast iron pan with a tablespoon of oil, you can do this in the GMG by setting it at 450f. Next combine the meat and all other ingredients (besides the vegetables) into a large stock pot and place into your smoker set at 275f. Cook for 1 1/2 hours uncovered.While the meat and stock is on the smoker peel the carrots, parsnips, onion and potatoes and cut into 1/2 in pieces. After 1 1/2 hours add the vegetables to the stew and continue to cook for 1 1/2 to 2 hours or until vegetables and meat are both tender but not falling apart.Add a piece of crusty bread, garnish with fresh parsley and enjoy!
